For the Lamb

  • 1½ kg lamb shoulder or leg, cut into large pieces
  • 2 tablespoons vegetable oil
  • 2 large onions, finely sliced
  • 5 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste

Whole Spices

  • 2 cinnamon sticks
  • 6 green cardamom pods
  • 5 cloves
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 dried black lime (loomi), pierced (optional but traditional)

Ground Spices

  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • Salt to taste

Rice

  • 3 cups basmati rice, rinsed and soaked for 30 minutes
  • 5 cups lamb stock (reserved from cooking the lamb)

Garnish

  • Fried onions
  • Toasted almonds
  • Toasted cashews
  • Chopped fresh coriander
  • Lemon wedges

Instructions

Step 1: Brown the Lamb

Heat the oil in a large pot over medium-high heat.

Brown the lamb on all sides, then remove and set aside.

Step 2: Build the Flavor

In the same pot, cook the onions until golden.

Add the garlic and ginger, cooking for 1 minute.

Stir in the tomatoes and tomato paste until softened.

Add the whole and ground spices, cooking for another minute to release their aromas.

Step 3: Simmer the Lamb

Return the lamb to the pot.

Pour in enough water to cover the meat.

Bring to a boil, skim off any foam, then reduce the heat.

Cover and simmer for about 1 hour until the lamb is tender.

Reserve 5 cups of the cooking stock.

Step 4: Cook the Rice

Drain the soaked rice and add it to the pot with the reserved stock.

Arrange the lamb over the rice.

Cover and cook over low heat for 20–25 minutes, or until the rice is fluffy and has absorbed the stock.

Allow the Machboos to rest for 10 minutes before fluffing the rice gently with a fork.

Chef's Tips

  • For the most authentic flavor, use loomi (dried black lime) and high-quality basmati rice.
  • Let the cooked rice rest before serving to achieve light, separate grains.
  • Chicken can be substituted for lamb if you prefer a lighter version.
  • Add a few saffron strands soaked in warm water over the rice before the final steaming for extra aroma and color.
